Soup out of a can!?!?!?

Nothing says “home-sweet-home” more than a homemade soup! Most soups are quick and easy to make, and are by far superior to canned or powdered ones. Commercially manufactured soups contain little or no nutrition. They are overcooked and filled with harmful preservatives, food color, artificial flavors, MSG, and frequently contain too much sodium.
Soups made at home from nothing but fresh and wholesome ingredients also offer better taste, color, and texture. When served with whole grain bread or pita, they present an added advantage: a filling, health-boosting and lean meal, which also helps control weight.
The winter months are a perfect time to cook body and soul warming soups, helping us avoid putting on holiday pounds. A soup’s hot liquid, with plenty of garlic, onion and other vitamin and mineral-rich vegetables, is a therapeutic respiratory ailment as well.
So plunge into one of life’s sublime pleasures: the joys of cooking, eating and sharing mouth-watering homemade soups!

LENTIL SOUP
(Serves 4 )
3/4 cup lentils, picked over for debris
4 cups water
1 large onion, chopped
1 bay leaf
2 carrots, sliced
1 celery stalk, sliced
1 large tomato, diced
3 cloves garlic, minced
Salt and pepper
2-1/2 tablespoons tarragon
4 tablespoons olive oil
2-3 tablespoons fresh lemon juice
Cook lentils, water, bay leaf, salt, pepper and tarragon for 15 minutes. Add onion, carrots celery, tomato and garlic. Cook 10 more minutes. Add oil and cook 5 more minutes.
Remove from stove, add lemon juice and discard bay leaf.
